Belowzero Ice Bar Case Study

Belowzero Ice Bar, is the UK’s only permanent ice bar, keeping things fun and frosty -5°C, located in Mayfair, London. As well as visiting the iconic ice bar, guests can also choose to enjoy a fantastic range of seasonal dishes inside the modern, yet casual (and surprisingly warm!) restaurant.

A sustainable approach

With over 3000 visitors each week to the ice bar and serving over 450 people a week in the restaurant, Belowzero wanted to look at how it could be more sustainable in its approach.

Mateus Mendes, Bar Manager at Belowzero Ice Bar explained:

“As a company, we are keen to lead with a more sustainable approach and installing an EauVation Table Top freshly purified water system has been a step forward in achieving that.

A neat and compact solution

The EauVation system has been a perfect fit for the business – it is neat and compact and has given us some additional benefits in that we now need considerably less storage for cases of bottled of water.

“It is also better value for money than buying bottles of water and there’s been a profit opportunity for us with certainly no loss of margin. Most importantly, we are significantly reducing the amount of waste we generate.

“In terms of the water experience at the table for our customers, there has been no loss of perceived quality in the way our water is served. Customers and our own team love our Belowzero branded water bottles as they are smart and look highly professional. This signature marketing is another way in which we set ourselves apart from other bars and restaurants”.

“Our new approach was a good decision. It has been widely applauded and shows our customers that we have sustainability at the forefront of our company ethos”.

Increased demand and profits

Belowzero offers its customers both still and sparkling water (freshly purified and chilled) at a reasonable price of £2 per bottle for sparkling, although still is complimentary, and Mateus says there has been an increase in demand since the EauVation system has been installed, particularly demand for sparkling water. He concludes:

“Our customers do often ask about our filtered water and when we explain to them the thinking behind the system, they are excited by it and some even ask if they can take a bottle home with them! We are very proud our EauVation filtered water system and we know our staff are too.”
